Sauerruben Sauerkraut Spread

Appetizing spread that uses lacto-fermented Sauerruben sauerkraut to dress up corned beef and swiss cheese. This spread pairs well with sourdough, pumpernickel, rye bread or crackers. It also takes mashed potatoes to a whole new level: just a tablespoon on top adds a tremendous amount of flavor.

Add the sauerkraut to the dish as a last step after cooking the base spread to preserve the live and active cultures.

INGREDIENTS

2/3 CUP Mayonnaise (or Plain Greek Yogurt)

1/2 LB Thinly sliced Deli Corned Beef, chopped

12 OZ Swiss Cheese, grated

8 OZ Sauerruben sauerkraut, chopped

Spread on or dip with sourdough bread, pumpernickel/rye bread, pita chips or crackers

SERVING OPTION WE LOVE:

1 TBSP atop your favorite mashed potato recipe

DIRECTIONS

Add all ingredients, except the sauerkraut to a bowl and mix. Put in a baking dish for 20-25 minutes on 375°. Remove the dish from oven, let cool. Fold in the chopped uncooked sauerkraut.
