Salad Greens with Fennel & Green Apple Sauerkraut and Citrus Vinaigrette Dressing
Fennel & Green Apple Sauerkraut with leafy greens, celery, avocado, fresh fennel fronds, and citrus vinaigrette dressing. This tasty vinaigrette dressing can be used with any Kres Kitchen Sauerkraut atop salad greens, spinach, grain bowl, vegetables, or even a sandwich/wrap.
INGREDIENTS
SALAD FIXINGS:
4 CUP Fresh Leafy Greens (loosely packed)
2 STEMS Celery stalks, finely cut
1/2 CUP Fresh Fennel Fronds (1/8 TSP Fennel Seed substitute)
1/2 Fresh Whole Avocado, sliced, diced or grated
2 TBSP Fennel & Green Apple Sauerkraut chopped
CITRUS VINAIGRETTE SALAD DRESSING:
2/3 CUP Whole Pulp Orange Juice, No Added Sugar
1/8 CUP Olive Oil
6 TBSP Lemon Juice
4 TSP Maple Syrup
2 TSP Dijon Mustard
1/8 TSP Salt
1/8 TSP Pepper
DIRECTIONS
Wash fresh lettuce and pat dry or use a salad spinner, remove any long stems and chop leaves
Slice celery thin, about 1/8” thick
Chop fresh fennel fronds
Chop, slice or grate avocado half
Chop Fennel & Apple Sauerkraut as desired
Mix in a large bowl
Add all salad dressing ingredients to a jar with lid and shake or whisk in a bowl. You can adjust the flavor by changing the proportions of the ingredients to taste.
Top salad with dressing before serving
