Leftover Sauerkraut Brine from your Favorite Kres Kraut Variety
Salt fermentation generates a natural brine which is extracted cabbage, fruit and vegetables juices. This brine is key to a successful fermentation because it helps to create an anaerobic environment allowing the good microbiology to grow and thrive. Because brine is integral to active sauerkraut fermentation, it is loaded with GUT-LOVING MICROBES and FLAVOR.
Don’t let your left-over brine go to waste! Instead, use as a base to make a flavorful salad dressing and enjoy even more fermented goodness!
INGREDIENTS
1 TBSP Sauerkraut Brine
1 TBSP Honey or Maple Syrup
2 TBSP Extra Virgin Olive Oil (optional)
1 TBSP Minced green onion or shallot
1 TSP Minced garlic
1 TBSP Fresh Herbs (oregano, thyme, basil, chervil work well)
DIRECTIONS
Strain the sauerkraut brine or simply add any kraut remnants to your dressing. Add all ingredients to a jar with lid and shake or whisk in a bowl. Enjoy immediately :)
OPTIONAL INGREDIENTS WE LOVE:
1 TBSP Dijon Mustard OR 1/4 tsp powered mustard
1/4 TSP paprika OR smoked paprika
Fresh Jalapeño pepper minced OR dried hot pepper flakes, to taste
FOR A CREAMY DRESSING:
1/4 Ripe Avocado
1 Small Tomato or 3 cherry tomatoes
In a blender, combine base recipe with avocado and tomato, blend until smooth.
