FISH TACOS
with Fennel & Green Apple Sauerkraut
Easy grilled fish or mushroom tacos are topped with a fresh fennel and green apple sauerkraut, savor the flavor!
Fennel and Green Apple Sauerkraut
Fennel bulbs, stems and fronds are delicately balanced with green apples to make a delicious and refreshing sauerkraut that captures a crisp and light milder flavor that is perfect atop grilled fish or chicken, barbecue dressed sandwich or for snacking on an epic vegetarian charcuterie.
Apple and fennel sauerkrauts is a wonderful example of how we can grow, harvest and savor whole plants throughout the year, even when locally grown fresh produce may not be seasonally available. Lacto-fermented sauerkrauts are a sustainable method to harvest and preserve produce without pasteurization, added sugar or vinegars.
INGREDIENTS
White Fish (or for a plant-based recipe substitute with Lion’s Main Mushroom)
Crushed Garlic
Citrus (Grapefruit is wonderful)
Warmed Small Tortillas
Honey
White Wine Vinegar
Salt & Pepper (to taste)
Fennel & Green Apple Sauerkraut
DIRECTIONS
Cook the garlic in pan
Add fish or mushrooms, season with salt and pepper and cook until done
Add grapefruit (or other citrus) to soften and release juice.
Make dressing by mixing honey with vinegar, salt and pepper.
Warm tortillas in pan or oven.
Assemble the tacos, dress with sauerkraut and savor the self love :)
