GARLIC SCAPE & CHIVE Kraut Dip
We have enjoyed making a fresh garlic scape dip for years to celebrate scape season and when asked by a customer if they could use our sauerkraut for the dip we adapted the original recipe to replicate the flavor and seasonal enjoyment with a preserved sauerkraut.
When we don’t have fresh garlic scapes in season try this recipe and enjoy summer flavors all year long.
Garlic Scape & Chive Sauerkraut
Nothing says the start of the fermentation season more to us than garlic scapes! We plant hardneck garlic in late fall as we wind down our annual growing season. Even, after a long Northeast Ohio winter, mother nature delights us with renewed growth when in early spring we watch as these beautiful garlic cloves sprout from beneath the dark and often snow covered soil.
As hardneck garlic grows, scapes emerge from the plant several weeks before the bulbs are ready to be harvested. If left on the garlic plant the scapes which are similar to a flower bud produce bulbils, tiny cloves of garlic, which is one of the ways garlic can reproduce. We harvest the tender scapes as they first emerge from the plant and ferment them with chives, cabbage and salt. It is a flavorful and savory sauerkraut that tastes great in this dip.
INGREDIENTS
1/3 CUP Garlic Scape and Chive Sauerkraut
1/8 CUP Walnuts
1/8 CUP Fresh Grated Parmesan Cheese
1/4 CUP Greek Yogurt
1 TBSP Fresh Chopped Parsley
This recipe scales well for any celebration!
1/8 cup = 2 tbps
1/4 cup = 4 tbsp
1/3 cup = 5 tbps + 1 tsp
DIRECTIONS
Make in a processor or chop and mix by hand
Chop walnuts first
Add kraut and parmesan, pulse or chop and mix until you have a pesto-like consistency (if you would like a smoother, spreadable dip include some kraut brine)
Add yogurt, puree or fold in until smooth
Add chopped parsley, pulse or fold in
Transfer to a dish, refrigerate
Dip will keep well in fridge up to 3 days.
