Carrot Quinoa Salad with Sweet Ginger Sauerkraut and Honey Ginger Dressing
Sweet Ginger Sauerkraut added to fresh shredded carrots, black sesame seeds, sunflower seeds, raisins, and ginger dressing. This tasty dressing can be used with any Kres Kitchen Sauerkraut atop salad greens, spinach, grain bowl, vegetables, or even a sandwich/wrap.
INGREDIENTS
1 CUP Cooked Quinoa
2 CUP Fresh Carrots, shredded
1/2 CUP Raisins (no sugar or preservatives added)
1 TSP Black Sesame Seeds
2 TSP Sunflower Seeds
2 TBSP Sweet Ginger Sauerkraut chopped
DRESSING:
1/4 CUP Whole Pulp Orange Juice, No Added Sugar
1 TBSP Vegetable Oil OR Olive Oil
1 TBSP Tamari OR Soy Sauce
2 TSP Fresh Ginger (alternative: Honey Fermented Ginger)
1 TBSP Honey
1 TBSP Chopped Garlic
DIRECTIONS
Put Quinoa in large bowl for mixing
Add Shredded Carrots
Add Sesame and Sunflower Seeds
Add Chopped Sweet Ginger Sauerkraut
Add Raisins and toss well in bowl with above ingredients
Add all salad dressing ingredients to a jar with lid and shake or whisk in a bowl. You can adjust the flavor by changing the proportions of the ingredients.
Top salad with dressing before serving, marinates well in fridge for three days.
