Our pepper paste is fully preserved using traditional lacto-fermentation. Because we don’t acidify (like with vinegar) or pasteurize, our pepper paste is a living probiotic food with all the gut-health benefits to match. That said, don’t hesitate to cook with this seasoning - just be aware that higher temperatures (over 104-110°F) will injure (and likely destroy) the good bacteria and enzymes. However, because the benefits of fermentation go beyond probiotics to include higher nutrient bioavailability and better digestibility, cooking with fermented foods is not a culinary offense. The fundamental attributes of lacto-fermentation will elevate flavor and nutritional value of any dish, whether or not the probiotics are still around.
